If you’re searching for the ultimate Alaska appetizer, look no further - this king crab avocado toast recipe from chef Maya Wilson’s cookbook, “Alaska From Scratch” is perfection on a platter.
Ingredients
Preparation
-
Mash the avocado
Halve the avocado and remove the pit. Scoop the flesh into a bowl. Mash the avocado thoroughly with a fork. Squeeze 2 teaspoons of juice onto the avocado. Season with salt to taste, stirring to combine. Spread the avocado onto the toast.
-
Prepare the crab and serve
Add the crab meat to a bowl. Squeeze a lemon wedge over top of the crab, stirring to coat. Season with salt to taste. Divide the crab evenly between both slices of toast. Sprinkle the crab with the chives. Serve with lemon wedges on the side.
Preheat grill to 400ºF. Tear an 18-inch sheet of heavy duty aluminum foil so that it is 4-inches longer than the seafood. Spray-coat the dull side of the foil; place crab on foil with some of the marinade. Bring the sides of the foil together and fold over several times to seal, leaving room for air circulation inside.
Transfer packet to grill and cook for 8 to 10 minutes. Serve with grilled seasonal vegetables and a little more melted butter for dipping.
